400 grams salmon
2 tablespoons paprika, divided
Salt, to taste
Pepper to taste
15 grams chickpeas
2 tablespoons olive oil
200 grams mixed vegetable salad
250 grams red quinoa, cooked
150 grams cherry tomatoes
2 tablespoons Ranch Dressing
Preparation
Heat the oven to 180 degrees. Sprinkle salmon with 1 teaspoon paprika; Season with salt and pepper. Bake on a lined baking tray for 15 minutes, or until desired doneness.
Place chickpeas in olive oil and remaining bell pepper in a bowl; Add salt and pepper to taste. Add chickpeas to a lined baking sheet. Bake at 200 degrees for 30-40 minutes.
Add lettuce to plate or bowl. Add quinoa, chickpeas, salmon and tomatoes. Drizzle with ranch dressing.
