The delicious hummus made from chickpeas is an integral part of Israeli cuisine. There are countless recipes that have been refined in the individual regions and by the chefs of the country. Jerusalem hummus is known for being particularly creamy and lemony.
Hummus ingredients:
– 80 g frozen chickpeas (or dried, then boil them with a pinch of salt)
– juice of one lemon
– 50 g tahini
– 1 finely chopped garlic clove
– salt
– 30-40 ml very cold water
– 1/2 teaspoon cumin
– olive oil
Preparation
Thaw the chickpeas or soak the dried peas overnight and then cook them with a little salt. Puree the chickpeas with lemon juice, tahini, cumin, garlic and salt until smooth. Slowly add the cold water until the hummus is creamy. For decoration:mix some chickpeas, olive oil, pepper, parsley and paprika powder.
