Marinated Sour Shrimp &Sour Mango &Tuna Sambal

Marinated Sour Shrimp:

Carambolas, or belimbing wuluh, are small, tart, golden-yellow, elongated fruits that grow in abundance throughout Indonesia, as well as several other parts of Southeast Asia. They instill a delicious (slightly tangy) flavor to salads. They can be replaced with oranges or grapefruit.

Place the prawns in a saucepan containing 2 liters of cold water, then bring to the boil. Simmer for 4 minutes, then drain the prawns and plunge them into ice water for 30 seconds. Drain and shell them.

Blend the shallots, peppers and star fruits (or grapefruit) in a blender until a smooth paste is obtained. Taste and add salt and a little lime or lemon juice if necessary. Mix with prawns and serve.

Sambal with mango and tuna:

This recipe originates from Ambon, Maluku, where tuna is abundant. You can replace the fresh tuna with drained canned tuna, but the dish will lose flavor.

Mix mangoes, salt and let stand for 10 minutes.

Squeeze the fruit to remove the juice. Then mix them with tuna, pepper shallots, coconut milk and serve.
