Boil the milk with the split vanilla pod. pour in the semolina, while stirring. Let cook for 10 minutes, stirring often. Add the sugar.
Off the heat, stir in the egg yolks, half the butter, ground almonds, beaten egg whites.
With the rest of the butter, grease a ring mold.
Cook in a bain-marie, in the oven for 25 minutes. (th. 6 -7. 230°C). Leave to cool and unmold.
While cooking, prepare a plum compote:wash and pit the plums by cutting them in half. Put them in a saucepan with very little water. Cook with the lid on over medium heat for 10 minutes. Then add the sugar, stir. Leave to cool.
Pour in the center of the semolina crown and serve.
