4. I salt, pepper and simmer over medium heat for 40 min.
5. Meanwhile, I fry my Bayonne ham and put it with its cooking juices in the vegetables.
6. I break my eggs into a bowl and beat them into an omelet.
7. I add them to my piperade.
8. I cook for 5 minutes while stirring occasionally.
It's ready!
Just as tasty, I sometimes replace my Bayonne ham with bacon or even chicken.
According to the desires and tastes of each, I arrange my eggs without beating them directly on my piperade and let them cook very slowly.
