My quinoa pancakes are a perfect illustration of my culinary cravings for the return spring:a recipe light in calories and price.

But be careful, there is no question of losing a crumb of flavor!

With this recipe, you are sure to please the whole household.

My Quinoa Spring Galettes at €1.50 per person.

Ingredients for 6 people

- 400 g of quinoa

- 2 carrots

- 1 leek

- 3 eggs

- 15 cl of fresh cream

- 50 g grated Emmental

- Olive Oil

- Salt, pepper

How to

Preparation:30 mins – Cooking:40 mins

1. Add the quinoa in a pot of boiling salted water and cook for 15 minutes over medium heat.

2. Finely chop the leeks

3. Peel and grate the carrots .

4. In a frying pan, heat a drizzle of olive oil then brown the vegetables for 15 min over low heat.

5. Season with salt and pepper.

6. In a bowl, beat the eggs with the cream .

7. Add the cooked vegetables, quinoa and emmental cheese.

8. Using a spoon, form small round patties with the preparation that you place in the oiled frying pan.

9. Cook 3 min per side while flattening them a bit.

10. Place on a paper towel before serving to remove excess oil, arrange them in a dish.

Result

There you go, the spring quinoa pancakes are already ready :-)

Easy to do, right?

Serve the patties warm or hot with a salad or as an accompaniment to meat.

Bonus tip

Vary the ingredients of your galettes according to your desires with seasonal vegetables.

And, if you want more complete cakes , decorate them with bacon or ham matches .

You can also incorporate aromatic herbs into the preparation of these to diversify the flavors.
