I like to entertain my friends and seduce them with recipes that come out a little out of the ordinary.
But my budget is not stretchable!
With my squid à la provençale, I cook a delicious dish for €3.90 per person.
A dish you don't eat every day, what's more.
- 800 g of squid (cleaned by your fishmonger; in rings if you opt for frozen squid)
- 4 tomatoes
- 1 green pepper
- 20 cl of white wine
- 1 onion
- 2 cloves of garlic
- Parsley
- Olive oil
- Salt and pepper
Preparation:15 min - Cooking:1h30
1. I rinse, sponge and cut my squid into strips. If they are frozen, I thaw them first.
2. I cut my bell pepper into small pieces.
3. I peel, mince my onion and garlic cloves and sauté them with 3 tablespoons of olive oil in a large skillet.
4. I add my bell pepper and cook over low heat for 5 minutes.
5. I peel, seed and chop my tomatoes.
6. I add my squid strips to the pan and brown them over high heat.
7. I then add my crushed tomatoes, my chopped parsley and my white wine then I salt and pepper.
8. I cover and simmer over low heat for 1h30.
9. I serve, for example, with basmati rice.
To properly prepare your pepper and get rid of its seeds, here is a very simple trick:I push the tail inside the pepper, it will come off and, when you remove it, the seeds will also fall out.
I then shake my bell pepper so that all the seeds come off.
- 800 g of fresh squid:€17 per kilo, i.e. €13.60
- 5 tomatoes:around 480 g at €2.50 per kilo, i.e. €1.20
- 1 green pepper:around 100 g at €3 per kilo, i.e. €0.30
- 20 cl of white wine:€3 per liter or €0.60
Either a succulent seafood recipe costing me €3.90 per guest or at €15.70 for 4 people.
