A delicious recipe from Willemijn and Liselotte from BeBio: We love everything with chickpeas and not only because it is healthy, but also because it is easy, nutritious and delicious. You can of course make hummus with it, but you can do a lot more with chickpeas. So here's a recipe that is very healthy because of the good combination of proteins, grains, minerals and good fats.
Chickpeas contain many minerals and antioxidants. In addition, it contains a lot of fiber and proteins, which makes it good after exercise, for example. It contains few calories, so a good option for a day in which you want to pay attention, the so-called balance day.
We use organic chickpeas from a glass jar, but you can also soak dried peas if you have more time. Here's our first chickpea recipe. More to follow!
What are the ingredients?
Chickpeas (about a jar pp)
Quinoa (about 100 grams pp)
Broccoli
Cherry tomatoes
Coarsely chopped parsley
2 tablespoons Mustard
· Splash of olive oil
· 1 squeezed lemon
· Salt and pepper
How are you doing?
1. Prepare the quinoa as instructed on the package.
2. Rinse the chickpeas and heat them up for a few minutes.
3. Cook the broccoli briefly so that not all vitamins have been boiled out and mix these together with the chickpeas in the quinoa in a bowl.
4. Halve the cherry tomatoes and stir them in together with the parsley.
5. Season this dish to taste by adding mustard to your own taste with a good dash of olive oil and squeezed lemon.
6. The final touch is ground pepper with a little sea salt!
