2 eggs
1 small avocado
1 slice of country bread
juice of 1/2 lemon
1 teaspoon of tabasco
olive oil, vinegar, chives, ground pepper, coarse salt
Recipe
In a small bowl, combine the thinly sliced avocado, lemon juice, tabasco.
In a saucepan bring the water to a simmer (not too much, about 10cm deep) with 3-4 tablespoons of vinegar and a pinch of coarse salt.
Crack the eggs and gently lay them in for poaching.
Lightly toast the slice of bread.
On a large plate, arrange the toast, moisten it with a little oil, garnish with the slice of avocado, sprinkle with chopped chives.
