Whatever you call them, these carnival donuts are a real treat.

And I always look forward to Mardi Gras to eat it.

It's a real pleasure for my taste buds, a pleasure that reminds me of my childhood!

Fortunately, my grandmother, who lived in Lyon, gave me her authentic recipe for bugnes lyonnaises.

So it's a family recipe for deliciously crispy bugnes that I share with you today.

Ingredients

- 250 g of flour

- 70 g of butter

- 2 eggs

- 10g caster sugar

- 1 liter of sunflower oil

How to

1. Pour the flour into a container.

2. Make a well in the flour.

3. Put the sugar in it.

4. Mix.

5. Add the eggs.

6. Mix again.

7. Melt the butter and pour it into the mixture.

8. Mix well to obtain a thick and homogeneous paste.

9. Make a ball with the dough.

10. Let the dough rest for 2h to 3h at room temperature .

11. Put some flour on the work surface.

12. Cut the ball in half to spread it more easily.

13. Using a rolling pin, roll out the dough into a layer of about 1/2 cm.

14. Cut diamond shapes in the dough. You can use a roulette wheel like this. Otherwise a simple knife will do.

15. Make two small slits in each diamond.

16. Heat the oil to 170°/180° in a deep frying pan.

17. Plunge the bugnes into the hot oil. You can put more than one at a time.

18. As soon as the bugnes begin to brown (after a minute maximum), turn them over, using a slotted spoon.

19. Place the bugnes in a dish covered with absorbent paper.

20. Sprinkle them with powdered sugar.

21. Repeat until there is no more dough.

As this recipe does not contain yeast, they are not too thick and above all they are super crispy.

And the more you roll out the dough, the thinner they will be.

They keep well for several days, but usually fade quite quickly!

At home, we are used to making bugnes plain with sugar.

But you can very well add additional ingredients.

For example, you can put a little orange blossom in the dough or a little rum, ginger, vanilla or even cardamom according to your tastes.

You can also replace the powdered sugar on the bugnes with icing sugar.
