Simmered for a long time, the pork roll is tender and tasty. Here is my economical recipe for cooking this piece of pork too often shunned by housewives!
Pork roll is traditionally considered a "low-cut". Often fatty, the round is sold with its rind and a piece of bone in the center. In short, nothing very glamorous!
But the advantage is its economic price per kilo … So I cook it very often, and everyone loves it!
What do we need?
- 1 slice of pork
- 1 onion
- 2 shallots
- 1 can of peeled tomatoes in juice
- 10 carrots
- 1 bag of green olives
- Olive oil
- Salt and pepper
The Preparation:
- Start by removing the rind and the skin.
- Cut the meat into large cubes about 2 cm wide.
- Fry the onion and the shallots cut into pieces in a drizzle of olive oil.
- When they are nicely browned, add the pieces of meat.
- Let brown on all sides.
- Wet with a glass of water.
- Add the peeled tomatoes cut into quarters, the carrots cut into slices.
- Simmer over medium heat, covered, for about an hour.
- Add another glass of water and the olives.
- Simmer over very low heat for at least 1h30 (the longer you leave, the more tender and moist the meat will be).
Serve with rice or green beans.
My Bonus Tip!
If you use scissors, the cut will be much easier and you will more easily separate the rind from the meat, avoiding waste.
