Skinny Six Hummus Bowl
For 2 people

You need this:
– 400 g chickpeas (drained weight, from jar, bag or can)
– 1 spelled pita
– 1 eggplant
– 125 g falafel
– 50 g lamb's lettuce
– 4 tbsp hummus
This is how you make it:
– Preheat the oven to 200 degrees.
– Line a baking tray with baking paper and divide the chickpeas on it.
– Sprinkle the chickpeas with some oil, pepper and salt and then roast them in the oven for 20 minutes.
– Meanwhile, cut the pita bread in half and cut each half into triangles.
– Sprinkle these pieces with some oil, pepper and salt and after 10 minutes place them next to each other on the baking tray with the chickpeas.
– Meanwhile, slice the aubergine and sprinkle with some oil, salt and pepper. Bake them in a grill pan for 5 minutes until nice stripes are formed on both sides.
– Heat a dash of oil in a frying pan and fry the falafel balls on all sides for 4 minutes.
– Take two bowls and fill them with lamb's lettuce, grilled aubergine, falafel, chickpeas and the homemade pita chips and finish with the hummus.
