I discovered this taco recipe by accident when we participated in a challenge from Santa Maria. The challenge meant that we would not have a phone at the table for a week and to keep it up a bit, we were rewarded with a nice box with products from Santa Maria, including the Tex Mex taco products. Hmmm.
We all like tacos here. Yet we don't eat them very often because I always get the idea that we don't eat enough vegetables. However, now I have found the solution for this. This taco recipe came about completely by accident, but it is very tasty and it contains enough vegetables!
So be sure to use my secret ingredient for the filling. I'm sure no one will notice and everyone will love this taco recipe!

To prepare it you need the following ingredients for 4 people:
Preparing the taco recipe is also a breeze:
We fill the tacos ourselves at the table, but you can of course also do it yourself in advance. Serve immediately so it doesn't get too cold. Once the tacos are filled, add a little more lettuce for a crispy bite and a little bit of taco sauce.
This way you will have made a delicious taco recipe in no time, which is also very healthy because of the cauliflower rice you have added. Since this cauliflower rice completely absorbs the taste, you don't even notice that you are eating cauliflower.
Do you have any filling left? In our case it always is, but I never throw away the leftover filling. For starters, you can enjoy this filling with tasty nacho chips or tortilla chips from Tex Mex. But you can also add brown beans and some other ingredients the next day to make a chili con carne. Can be excellent! Baking with a fried egg is also very tasty, so there is plenty of choice.
