It's Epiphany crowned by its famous galette!
And to celebrate this event, there's nothing like a beautiful homemade galette des rois.
This year, it will be frangipane and chocolate.
My children love these moments when, finally, they will choose their king and their queen.
So, if I, this year, don't have the fève, I hope to be the queen of the kitchen with my tasty galette recipe.

- 2 rolls of puff pastry (store-bought)
- 100g ground almonds

- 100g of sugar
- 2 eggs + 1 egg yolk (for the glaze)

1. I melt the butter and chocolate in a saucepan.
2. I beat the eggs with the sugar.
3. I add to this preparation the softened butter and chocolate as well as the almonds.
4. I unroll one of the puff pastry on the baking sheet covered with parchment paper.
5. I place the chocolate frangipane preparation in the center and spread it well while leaving about 2 cm of dough on the edge.
6. I press the bean into the dough.
7. I cover everything with the 2 e puff pastry, of course pressing the edges to seal them.
8. Using a brush, I brush the top of the galette with the beaten egg yolk.
9. With a fork or the blade of a knife, I draw crosses on the top of the galette.
10. I bake it for about 30 minutes at 180°C.
There you go, your galette des rois is ready :-)
