What a joy, these cakes! Sweets should not be missing from Mother's Day breakfast, and this recipe will do just that. The granola base, the vegan yogurt filling and the fruit make these tarts a fresh and surprising addition to breakfast.

Ingredients
For 8 cakes
- 75 g raw and unsalted nuts
- 175 g oat flakes
- 1 tsp cinnamon
- 50 ml agave syrup
- 5 tbsp Blue Band Liquid Every Day
- 1 tsp vanilla extract
- 300 g coconut yogurt
- 1 kiwi, in wedges
- 100 g strawberries, sliced
- 50 g blueberries
Extra needed:
8 mini tart pans with a removable bottom

Preparation method
- Preheat the oven to 175°C.
- Put the nuts in a food processor and grind them fine. Transfer the ground nuts to a bowl and add the oats and cinnamon. Stir it all together.
- Then add the agave syrup, Blue Band liquid and vanilla extract. Stir everything together and divide the granola over the cake tins.
- Bake the granola bases in the oven for 15-20 minutes until they are golden brown.
- When they have cooled, remove the granola bottoms from the moulds, fill the pie crusts with coconut yoghurt and garnish with kiwi, strawberries and blueberries.
