A well-filled sandwich is already tasty, but a warm sandwich is even better! These Pulled Oats, Potato and Tomato sandwiches are a delicious vegetarian brunch dish that's perfect for World Animal Day.

Did you know that Pulled Oats are 100% plant-based? This is how you make a vegetarian brunch that is good for you and the animals.

Ingredients

For 2-3 people

  • 1 pack of Pulled Oats® Tomato
  • 3 slices of rye bread
  • 1½ tbsp Dijon mustard
  • 3 boiled potatoes
  • fresh chives or rosemary
  • 3 slices oat (or whole wheat) bread
  • 1½ tbsp pesto
  • 2 small tomatoes
  • fresh basil
  • 2 small eggs (optional)
  • 3 dl grated cheese

Preparation method

  1. Preheat the oven to 225°C.
  2. Spread the rye bread with mustard and spread with potato slices, Pulled Oats and herbs of your choice.
  3. Spread the oat bread with pesto and spread with tomato slices, Pulled Oats and basil.
  4. If you like, mix the eggs with the grated cheese and spread over the bread. Or just use grated cheese. Bake for 10 minutes.
