So here's the recipe for a healthy rainbow sandwich that not only has a lot to offer in terms of looks, but also vitamins and fiber. Do you eat gluten free? Then use gluten-free bread.
Ingredients for 2 servings
4 slices of bread
Beetroot humus
1 mango
1 avocado
1 carrot
1 cucumber
A little red cabbage
Salt and pepper/cayenne pepper
Iingredients for beet humus
3 small beets
165 g chickpeas
2 teaspoons tahini paste
2 cloves garlic
3 teaspoons olive oil
3 teaspoons water
½ teaspoon paprika seasoning
1 lemon
1 pinch of salt
Preparation
First, puree the ingredients for the beetroot humus until creamy and season with salt. Spread the slices with the beetroot humus. Then wash the vegetables and cut them into thin strips. Arrange the toppings one after the other (and by color) on the bread and season with a little salt and pepper if necessary. The red cabbage can also be fried and/or marinated in oil if desired. Then place the second slice on the sandwich, halve the whole and decorate with, for example, Brussels sprouts. If desired, the bread slices can also be briefly toasted in a pan or in the toaster before cooking.
