Recipe:healthy banana bread

Baking is a great activity to get through the lockdown a bit! This time a very tasty and healthy recipe, namely banana bread.

Two ways

You can make banana bread in two ways:with sugar and flour, or the healthy way without sugar, gluten and lactose. We go for the healthy version. To make the best banana bread you need very ripe bananas.

No ripe bananas in the house?

Don't worry, you can help the maturing process with the help of an oven. Place the bananas in the oven at 150 degrees Celsius for 30 minutes. After 30 minutes, your bananas will be wonderfully soft inside.

Ingredients

  • 3 ripe bananas
  • 3 eggs
  • 150 grams of almond flour
  • 55 grams of coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 tablespoon of honey
  • 1 tablespoon vanilla extract
  • 2 tablespoons coconut oil
  • Pinch of salt

Getting started

  • Preheat the oven to 180 degrees Celsius. Grease a cake tin with a little coconut oil.
  • Mix the bananas, coconut oil, honey, vanilla extract and eggs in a bowl until combined. Add the almond flour, coconut flour, baking powder, pinch of salt and cinnamon to the mixture and stir until all ingredients are fully incorporated. Pour the mixture, which may be a bit thick, into the greased cake tin.
  • Bake in the oven for 30 to 35 minutes until golden brown and cooked through. Check the doneness of the bread by inserting a skewer. If it comes out clean and dry, the bread is good.
  • Let the bread cool in the cake tin for 10 minutes. Remove the bread from the mold after 10 minutes and let it cool completely for another 30 minutes.
