This is what you do:
In the kitchen
Marinate the roast by rubbing the rub well. The spice mixture should be evenly distributed – don't be modest with the amount.
Wrap the roast in plastic wrap or place in a plastic bag and let it rest overnight while it cools.
At the BBQ Prepare the grill for indirect, low heat, approximately 100-110°C. Fill a smoker box completely with smoke chips and place on the grill's Flavorizer Bars over the lit burner. Fill an aluminum mold with water and place it on the grid.
Put the meat on the grid, insert the temperature sensor and set the thermometer to 90 °C.
Add more smoke chips continuously for the first 3 hours and pour more water into the aluminum mold when it evaporates.
Remove the meat from the grill when the core temperature reaches 90 °C. Let the meat rest for 15-30 minutes and then pull the meat apart. Season with salt, pepper, heated apple juice and possibly some extra rub.
