You are about to receive guests and you are looking for a refined recipe and not Dear?
Here's a cool dinner idea.
Every time I host, I face a dilemma:to be original, but without blowing my limited budget. Anyway, I know what I'm going to prepare tonight...
Here is a recipe recommended by the young chef Gégory Cuilleron, revealed in the shows Top Chef and A Near-Perfect Dinner.
This recipe is salmon gravlax, which is detailed by Grégory himself.
- A back of salmon of 500 g. You can buy it at Picard or at your fishmonger for about 15€.
- 4 Charlotte potatoes. Price:1€.
- 100 g fine salt
- the zest of half an orange. Price:20 cents.
- 100 g caster sugar. To buy in supermarkets for around €1.30.
- 1 Granny Smith apple. Price:20 cents.
For the vinaigrette:
- 15 cl of olive oil
- 20 g of grated ginger. A 100g bag costs just €1.
- 3 tablespoons of balsamic vinegar.
- 3 tablespoons of orange juice.
All in all, this recipe worthy of a 3-star restaurant will cost you less than €20.
That is to say 2 times cheaper than a McDonald's for the same number of people. At this price, you can impress your friends every 2 weeks.
1. First I remove the brown skin from the salmon (completely inedible, I tried). In general, you can ask your fishmonger, who takes care of it without problem.
2. I mix the salt and the caster sugar in a large dish, then I gently place the salmon, which I cover with salt/sugar. I leave everything in the fridge for 6 hours.
3. I take this opportunity to peel the boiled potatoes and cut them into slices in a dish, which I cover with foil and keep aside.
4. I'm going to ask my neighbors if they don't have a bandage or two because I suck at knife handling.
5. Now I prepare the vinaigrette:I chop the ginger, I add a little balsamic vinegar, the juice of half an orange and a little salt, then I whip the vinaigrette with a little olive oil.
6. I cut the Granny Smith apple and sprinkle it with orange juice.
7. I rinse the salmon under running water and pat it gently. I separate the back of salmon in 2, and I place the apple slices and the vinaigrette. And it's over!
